Vinland Saga has a single continuity with no alternate versions or recap films, so the order is simply Season 1 then Season 2.
Season 1 (24 episodes, WIT STUDIO) adapts the manga's Prologue arc: Thorfinn's years with Askeladd's mercenary band during the Danish invasion of England. Season 2 (24 episodes, MAPPA) adapts the Farmland arc and is set about a year later, with Thorfinn working as a slave on a Danish farm alongside a new lead, Einar. The studio changed, but the director, series writer and character designer stayed the same.
The shift from battlefield to farm is the point of the story, not a change in direction. Season 2 is about what is left of Thorfinn once revenge is gone, and it pays off everything Season 1 built.
The two short extras were released online during Season 2's broadcast, each about a minute long. Episode 6.5, Drowning in the Shadow, is an anime-original scene of Thorfinn's nightmare, best watched after episode 6. Episode 18.5, Same old story, shows Ketil rallying the men on his farm, which the start of episode 19 refers back to. It is worth watching right after episode 18.

Season 2 ends at the close of the Farmland arc. Start at chapter 100 in volume 14; the final episode covers part of it, so you lose a few pages at most. The manga is complete in 29 volumes, and Kodansha publishes it in English.
