The Seven Deadly Sins runs in a single line, but two things trip people up. The first is Signs of Holy War, a four-episode arc that sits between Season 1 and Revival of the Commandments. It is short enough to be mistaken for a bonus, and Netflix even lists it as its own season, but it bridges the first two seasons and belongs in the main order.
The second is the movies. Prisoners of the Sky is an original side story based on a concept by the manga's author, Nakaba Suzuki. It fits after Revival of the Commandments and before Imperial Wrath of the Gods, but nothing later depends on it, so it is optional. Cursed by Light is different: it is a new story by Suzuki that continues after Dragon's Judgement, and it is the true final chapter of the original cast's story.
The animation changes studios partway through. A-1 Pictures made the first two seasons, and Studio Deen took over for Imperial Wrath of the Gods and Dragon's Judgement, whose visuals were widely criticized. The story in those seasons is still essential, so do not skip them.
The two OVAs are bonus episodes released with the manga. Grudge of Edinburgh is a two-part CG film for Netflix that focuses on Tristan, Meliodas and Elizabeth's son, and leads toward the sequel. Four Knights of the Apocalypse is that sequel, a new series set 16 years after the Holy War.
The Seven Deadly Sins has 5 seasons and 1 film in the main run — 100 episodes altogether.

Netflix lists the four-episode Signs of Holy War as Season 2, so every season after it is numbered one higher there. Officially, Revival of the Commandments is Season 2 and Dragon's Judgement is Season 4, while Netflix calls Dragon's Judgement Season 5. The table on this page also lists Signs of Holy War as its own season, which is why it shows five. The order is the same either way.

It is the official sequel, set 16 years after the Holy War and led by a new protagonist, Percival. The anime was made to be enjoyable whether or not you know the original, but the original Sins appear throughout, so watching The Seven Deadly Sins first adds a lot. Season 1 has 24 episodes and Season 2 has 12.
